Presentation

  • Regional cuisine

And one, and two, and three! Even though you may tire of the often repeated stories of a glorious evening in July 1998, there are no goals that will stir up the crowds in the town except football, but their forts may run football a good second best. The local history buffs will tell you that they have great respect here for the fort of Saint-Nicholas, situated at the entrance to the Old Port. The fort has split over the years into the Fort of Ganteaume and the Fort of Entrecasteaux. And for good measure, they will add the Fort of Saint-Jean. One, two and three: our number is up. And in the panoramic restaurant in the establishment, beloved of Silvio Iacovino, you will discover the chef Dominique Frérard enthusiastically playing the local food card where the seafood, very logically, plays a big part. We taste. We contemplate. We marvel. We enjoy...

Specialties

Signature plate: The classic Pigeon from “Bresse”, breast tenderloin “en pastille” with eggplant and sweetly spiced fig chutney, minted couscous. You will taste an Italian inspired Mediterranean cuisine between surf and turf, enhanced always by seasonal local products. Therefore, the menu in its entirety changes every two months and the special menus once every three weeks.

A word from the chef

I have always maintained my passion for the restaurant Les Trois Forts and the pride I feel in translating this passion into my cuisine. To do this, my mission is to showcase all the wonderful products of Provence for the grand pleasure of gourmets everywhere. The soil of Provence is an essential source of inspiration: the best olive oil, eggplant and tomatoes naturally find their place on the plates of Les Trois Forts. My goal is to create a sublime cuisine, making full use of traditional Provencal recipes while infusing refined methods and elements to create a gastronomic result. On Sunday afternoons, Marseille’s decontraction lends itself to a comfortable and plentiful brunch with a magnificent view. The Sunday Break proposes a sweet and savoury sun drenched experience.
