A mix of France and Japan in the heart of the Loire Castles: this is the challenge taken up by chef Anthony Maubert and his wife Fumiko who settled in Blois on the banks of the river. They create bold recipes where Japanese cuisine accompanies the products of our terroirs like a common thread. For dessert, Fumiko's pastries combine dietetics and delicacies to delight the taste buds. Awarded a Michelin star in 2015, the Franco-Japanese couple continues their journey with an increasingly fresh and inventive cuisine. "Assa" means "the morning" in Japanese: it is indeed every morning that the menu changes, according to the arrival of the products. But the wonder does not stop in the plate. This 30's building has been completely renovated and its restaurant offers a very nice view on the Loire. The interior decoration is zen and soothing.
